Freezer Meals

8 hours.  That is how long I spent cooking last Friday.  But I did end up with quite a lot to show for it!  27 meals to be exact.  Not too shabby, right?

Not too long ago, a friend told me about how she would put up a month’s worth of meals in her freezer to save time and money.  And because I love to copy good ideas, I learned a little about it myself and started doing it some too.

I have to admit, I don’t normally do this many meals in one day.  Normally I will just plan a meal and then prepare two or three times what we need for that evening and then freeze the other portion for later.

The last couple of times that I have done it, I decided to do a whole bunch of different meals at once.  It was fun.  But also very exhausting.  That’s a lot of cooking/prepping!!!!

It means though that I can take it pretty easy for the next few weeks, because I have lots of meals ready to go.  This time around I made lasagna (a staple in our household), chicken noodle soup, black bean soup, veggie chili, chicken pot pie, chicken enchilada casserole, cheesy veggie & rice casserole, and beef stew kits.

I normally divide the recipe out into portions that will feed approximately 4 adults.  That seems to work out perfect for a meal for our little family.  I like to use the little 8x8 ‘cake’ tins to freeze casseroles in.  They are the perfect portion size, they hold up really well and then you can pop them right into the oven directly from the freezer.

I also do a few larger size ones so that I have an easy something on hand if we have a couple extra people to feed.

The total bill for all the food, foil pans, and freezer bags was right at $180.00.  So divide that by 27 meals and it comes out to about $6.67 a meal.  I think that is a pretty good price for a homemade meal made with fresh high quality ingredients that will feed 4 adults, or in our case 2 adults and 3 children.  With a lot of the meals I’ll add a salad or some fresh fruit to go along with it to make it more balanced, but even adding in the cost of that makes for pretty inexpensive meals.

So do any of you freeze meals?   If so, what meals have you found hold up the best to being frozen and then reheated/cooked?  I’m always up for expanding our rotation of meals!

  1. WOW you are KILLING me! That is so Awesome! I will be thinking of you tonight as you Pop a meal in the oven and I am slaving away... Ha ha! Way to work it! I should work on doing the same thing. I want to know your favorite meals and how it is done. You are the Best! Love the photo of Dallin and Layton. What handsome boys. Layton looks so big and his curls are so cute!

  2. Way to go girl!!!!! I have always done it but on a smaller scale. Usually cook for the whole week on Saturday. One of my surprising things I learned just a few years ago is how well rice freezes. It takes so long for wild and brown rice to cook (45 minutes) so I usually make a big pot of it and freeze it in one cup servings using the zip lock snack bags. Only takes a minute to nuke it and it is ready to serve.

    Other favorites (and yours) Lima Bean Soup, Turkey & Broccoli enchaladas, (Mama Doris's idea), Pot Roast, Sweet Potatoes

  4. Yes, I am BIG on this too! I do a lot of the ones you mentioned too(casseroles & soups are the best for it). One tip I have found is not to put cheese on the top of casseroles until 1/2 way through the rebake (it tends to get too hard). Here's some others that I do:

    *Mom's broccoli/chicken casserole
    *Chicken or Beef enchiladas
    *Seasoned Taco Meat
    *Spaghetti sauce
    *Spinach Quiche

    If you leave tin foil over the top of the casserole until the last 20 to 30 minutes of bake time, the cheese won't get hard.

  6. Is there a website with recipes? I think that this sounds great! I can always use a meal on a crazy day. Good for you to commit and go all out! Everything looks Yummy!

  7. You girls are doing such a good job. I wish I could have done that when my kids were small. It was all I could do to make it thru a day! Keep up the good work.

  8. Great idea!! Such a time and money saver! I haven't frozen many meals but one I have done is stuffed shells (recipe on the box of the jumbo shells and I will add some variations such as meat if it is just for cheese ones).

  9. Mandi, I didn't really use any specific website for the recipes. I just used recipes that I had on hand. I'm sure there probably are some websites out there specifically about freezing meals, but I haven't looked them yet. If go searching for one and find a good one, be sure to pass it along to me! I'll do the same :)
