For National Pancake Day last week we weren’t able to make it out to I-Hop for free pancakes – so we had some at home that night for dinner!
Add in strawberries with freshly whipped cream and we were in heaven. These pancakes I made using freshly ground spelt, just to try it out you know.
And the kids didn’t even notice. They just dug right in!
Dallin loved creating the perfect bite – pancake with syrup, a strawberry, and a bit of cream – delish!
The spelt tasted really good, but I think I like whole wheat pancakes better. The spelt gave the pancakes a slightly chewy texture and I prefer the lighter more delicate texture of wheat. I’m really enjoying my adventures with different flours!

Ooooh, Can't wait to try different flours. My next is going to be quinoa.
